To obtain the acknowledgement it must be accomplished what is indicated in the Disciplinary for the production of DOP Umbria and be submitted to compliance checks carried out by the 3A PTA (3A Parco Tecnologico Agroalimentare dell'Umbria).
As required by the MiPAF (Ministry of Agriculture and Forestry) reference pattern all the stakeholders in the production thread of controlled extra-virgin olive oil have been identified. For each stakeholder the MiPAF Disciplinary specifies the procedures and the attainments necessary to obtain the DOP Umbria mark. The production thread includes the olive farmer, the oil-mill worker and the packer.
Only after having verified the abidance of all the conformity requirements and the compliance with the physico-chemical and sensorial characteristics established by the Disciplinary it is possible to bear the Umbria Colli Assisi-Spoleto DOP mark.
